I'm looking for a gluten-free gochujang paste, a korean pepper paste sold in tubs. They all have wheat listed except for one brand. It lists seed malt as an ingredient. What the heck is seed malt? Naturally the word malt scares me but the allergen list just says soy. I know the translation of asian product ingredients sometimes gets mixed up. Does anyone know what seed malt is?

This is the most useful information I could find. It sounds like they're specifying it isn't barley malt? Not a whole lot of particularly useful, fast and easy to find info on seed malt. I did see one company post on facebook about it that they made it from rice. Seed malt is apparently an umbrella term and it includes some seeds like barley which will be a gluten problem. That MAY be broken down in the fermentation, depending on the cultures they use. But without testing and certification? You are rolling the dice.
