Oatmeal Muffins

I found this recipe in a regular cookbook. Pretty simple and tasty if you eat oats.

2 c. Quick cooking oats.

1/3 c. Brown sugar

1 1/2 t. Baking powder

1/2 t. Salt

1 c. Milk

2 eggs ( I used 1/2 c. Applesauce)

2 T. Oil

1 t. Vanilla

Mix dry ingredients. Mix wet ones and add to dry. Blend well and let set 5 minutes. Grease muffin pan and pour mix into pan. Bake at 350 for 15-20 minutes. Serve these topped with syrup.

Are there quick cook gluten-free oats? Or did you just use regular gluten-free oats?

I used Bob's red mill gluten-free quick cooking oats.

Oooh, looks like a good recipe.  If I want to eat them in like, the car, and not be messy, should I up the sugar a little bit?  Definitely going into my to try folder!

I used almond milk and applesauce and they were not crumbly at all. They are not extremely sweet but I eat them with dairy free yogurt.

      Hi Scott, yes I have had symptoms for years and this is the second GI I have seen and he could not believe I have never been tested. He called later today and I am scheduled for an endoscopy. Is there a way to tell how severe my potential celiac is from the results above? What are the chances I will have the biopsy and come back negative and we have to keep...

      Constant low back, abdominal and pelvic pain!

      I agree christina, there is definitely many contributing factors! I have the pain today, my pelvis, hips and thighs ache! No idea why. But i have been sitting at work for 3 days so im thinking its my back. This disease is very mysterious (and frustrating) but not always to blame for every pain.

      What kind of stool test was done? Can you be more specific?

      Perhaps I should also have said that in addition to showing a very high response to gluten, her stool study showed that she had extreme reactions to everything achievement on it long course of microbials to treat that.
