Awesome! It's so rare for me to find a gluten free veggie!  :D  Happy to meet you :) I was vegan and still have to go back every now and then. If I get glutened I can't tolerate dairy for a while.

Will do, please do the same for me! I do okay with eggs if they are baked in things but when I try to get just scrambled eggs it makes my stomach hurt  <_< But I am thankful I can use them in baked goods and such!

Muffins were yummy, but I was nervous at how it would work so I added about a 1/3c flax meal and an extra egg.  I surprised how light this muffin was!

I'm happy you tried them! The do turn out great with only two eggs but extra protein can't hurt right? I'm thinking about adding flax next time just because I need to incorporate more into my diet. I shocked when I pulled them out of the oven, it looked and felt like they had flour in them. My kids love them! I am going to try freezing a few and if they do well I will stock up, they would be great to send in lunches or grab on the go.

Its a lot like this recipe Emeril made on Good Morning America

Emeril’s Peanut Butter Cookies

Ingredients
·  1 cup creamy peanut butter
·  1/2 cup granulated sugar
·  1/2 cup packed light brown sugar
·  1/2 cup semisweet chocolate chips
·  1 large egg, beaten
·  1 teaspoon vanilla extract
·  Cooking Directions
Prep time: 5 minutes
Cook time: 10 minutes
Total: 15 minutes
1. Position two oven racks in the center of the oven and preheat the oven to 350°F.
2. Combine all the ingredients in a bowl, and stir with a wooden spoon until smooth.
3. Divide the dough into 24 portions, about 1 heaping tablespoon each. Roll each portion between your hands to form a smooth ball. Place the balls of dough on ungreased cookie sheets, spacing them 1 inch apart. You should get about 12 cookies per sheet. Using
a fork, press on the dough in two directions to form a crosshatch pattern.
4. Bake the cookies, rotating the sheets between oven racks and turning them back to front midway, until the cookies are puffed and lightly golden, about 10 minutes. Remove the baking sheets from the oven and let the cookies cool on the sheets. Then remove them with a metal spatula.
Makes about 24 cookies

My 7 year old cut his in half and added jam - he said it was peanut butter and jam muffin-wich. LOL

That is ADORABLE! I'm going to have to try that!

So they taste like peanut butter rather than bananas? I'm not fond of peanut butter unless it is baked into something, and I'm not fond of bananas if they ARE baked into something. But if these taste like peanut butter I would probably like them. Especially cut in half with a hershey bar in between.

gluten-free since June, 2011

It took 3 !/2 years but my intolerances to corn, soy, and everything else (except gluten) are gone!

Life is good!
