When a cookbook recipe lists white flour as ingredient, can you subsitute the exact measurment with gluten-free flour? I have a box of gluten-free flour mix.

Glutenfree&more had a wonderful article about flours and substitutions. It was last month but I'm sure you can find it on their website.
