Almond Coconut Chocolate Cookies

These are my new favorite cookies I dreamed up one day.  I just wanted to share them with all of you!

Almond Coconut Chocolate Cookies

1 full-sized box of chocolate gluten free cake mix 
3 medium eggs
1/3 c coconut oil
1 c shredded coconut 
1 c sliced almonds
6 oz chocolate chips

Preheat oven to 350 degrees. Spread coconut evenly across the bottom of a baking sheet. Toast coconut in oven for 5-8 minutes (watch carefully!).

Raise oven heat to 375 degrees.

In a medium sized mixing bowl mix cake mix, eggs, and coconut oil until well blended.

Add toasted coconut, almonds, and chocolate chips. Mix well. Use hands to knead if needed.

Form dough into even sized balls and flatten with hand. Bake for 10-12 minutes. Cool on counter to keep cookies soft.

Enjoy with a tall glass of your favorite type of milk (cow, rice, soy, almond).
