There problem is not just related to the road work. In recent years those of us that opened up small gluten free businesses have been knocked out and shut down by the processed "main stream" gluten free options in stores. While some people do not mind spending the extra money and time to head to a specialty shop for fresh healthy gluten free food. Many will opt for convenience of the processed cheap, and unhealthy versions in grocery stores now. The mainstream gluten free fads are now making it easier to get gluten free food in normal stores at lower prices.......the bad part is this hurts us that do it with love, real ingredients, passion, and for our customers and our own health.

I myself am having to look at shutting down my bakery and moving to a more general "Paleo" food truck to make a living now days. Still gluten free but having to push the "Paleo, eat like your ancestors" over the gluten free now days. But even this is hard to get funding/financing for a individual run business.

Diagnosed Issues
Celiac (Gluten Ataxia, and Villi Damage dia. 2014, Villi mostly healed on gluten-free diet 2017 confirmed by scope)
Ulcerative Colitis (Dia, 2017), ADHD, Bipolar, Asperger Syndrome (form of autism)
Allergies Corn, Whey
Peanuts (resolved 2019), Cellulose Gel, Lactose, Soy, Yeast
Olives (Seems to have resolved or gone mostly away as of Jan, 2017), Sesame (Gone away as of June 2017, still slight Nausea)
Enzyme issues with digesting some foods I have to take Pancreatic Enzymes Since mine does not work right, additional food prep steps also
Low Tolerance for sugars and carbs (Glucose spikes and UC Flares)
Occupation Gluten Free Bakery, Paleo Based Chef/Food Catering
