Hi,

Sorry if this has been discussed before, no time to skim all topics right now.

Just fried this savory pie using (new brand of) buckwheat flour, tapioca & psyllium (plus baking soda) and it turned out a blackish color. Anyone has an idea why? Tasted it and no problem at all with its flavor, but still can't face eating the whole thing because of the way it looks - as if it had lead in it or sg :)

Pls help if you know the answer. Dark bits in the pic are NOT! nicely brown but black/green :(blackGFpie.jpg.db02e9639e2dfe65a89fcf9f51704732.jpg

I have never  fried with it.  Is it possible it’s something in the filling showing through or soaking into the crust?

Sometimes with gluten-free coated & fries foods it helps to freeze it before frying.  You would have to make smaller pies that way.

Has since googled buckwheat galette images & got this https://www.seriouseats.com/2017/05/how-to-make-french-buckwheat-crepes.html & that https://theroaminggastrognome.com/2015/01/01/savory-buckwheat-crepe-breakfast-galette-complete/

I posted originally coz I never had this happen with any other brand of BW flour (all were whole grain, just like this new type). By the way, the one I'm using right now is def darker in color, maybe that also explains it a bit further. Anyway, this color is not too easy on my eyes to say the least :)

To reply the comment "Is it possible it’s something in the filling showing through or soaking into the crust?" - There's no filling in it, made from buckwheat flour, tapioca starch, psyllium husk plus baking soda and nothing else. Its a plain savory crepe.

I thought it was a little

pie filled with something.  I looked at pictures of fried things made with buckwheat flour and a few looked pretty dark.   Odd.
