I did one a few years ago using a FatHead dough base and did it in a pie pan. I used vegan cheese and it turned out decent.....expensive as all balls so more of a once or twice a year treat I think the real cheese version is much cheaper  A similar method can be used to make gooy cinnamon rolls the melted cheese made the dough gooy stretchy like gluten dough.  I found some examples and they look great
