My Solution To Fast, Easy, Cheap(er) Gluten Free Eating

I've mentioned this in a couple places now, but I see so many people posting having trouble making meals, buying groceries, etc.

Before I was Diagnosed I was very much into the South Beach Diet, not so much for wiegh reasons, but because my ex-husband had heart issues at 35 years old, and I decided eating healthier was a good idea.

Phase 1 of South beach is a very low carb phase, phase two has more carbs, then phase three is normal eating with healthy food.

I have the South Beach Diet cookbooks, my favorite being the Quick & Easy 30minute recipes one:

and I make all my dinner meals ( and daytime salads) based on this book and the regular one. I usually pick a phase 1 dinner, then add a side of rice or quinoa or veggies, or helll, even toast.

The thing its missing that the gluten free cookbooks have are listings of brands of stuff, but once you figure out which chicken broth to buy, etc, it gets pretty easy.

My diet is now focused on fresh veggies, fresh fruit, meats ( there are vegetarian recipes but not as much) and the specialty gluten-free items I just bust out when I have a hankering for toast or pasta.

Its really helped me regain control of my kitchen and my grocery store runs, and I feel really healthy when I'm eating.

My boyfriends happy, cause he's eating great food every night. The recipes are delicious and some of thier soups are amazing.

I just thought I'd share, because this is a battle we all fight, and I found that trying to cook out of the specialty cookbooks was too time consuming and difficult. On the weekends I'll tackle something more challenging from one of Bette's books if I feel like it, but on the weekdays I need to be spending less than an hour in my kitchen making dinner.

Thanks Elonwy--that sounds like something I could use. I have been making the same dinners over and over--they're good, just stuff we always eat made gluten-free. I'm ready to step up to some different recipes. Nothing complicated, just a little more variety.

      Celiac Emotional Healing Support Group
      Again you are invited to join Johnny Patout, LCSW for Baton Rouge's first emotional healing support group meeting to assist those living with celiac disease manage the emotional challenges so many of us face. Most often the emotional disturbances include depression, disinterest in normal activities, insomnia, grief, mood changes, anxiety, inability to concentrate, extreme concern about managing a gluten-free lifestyle and other emotional and behavioral challenges.
      The professionals at Jamestown Avenue Counseling Center created the emotional healing support group to give us a safe place to begin to process our emotions and support each other as we heal emotionally while managing celiac disease and the resulting autoimmune disorders.
      The emotional healing support group meets every Thursday, 6:00-7:00pm, at the Jamestown Avenue Counseling Center of Baton Rouge. Jamestown Avenue Counseling Center is located at 4637 Jamestown Avenue, Baton Rouge, Suite B-1. Suite B-1 is upstairs.
