Maybe consider a condo.  One that is near a gluten free restaurant.  You can cook and dine out.  Not ideal, if you do not want to cook, but safe, maybe more affordable (big recession here) and still fun.  Another idea is to stay at a Bed and Breakfast Inn that is dedicated/or trained gluten-free.

I have successfully cruised in the past, but I am not sure I would want to cruise now with this pandemic.  
 

Finally, consider a small get-away right after the wedding because of this pandemic.  Maybe do your big trip a year later.  That is what we did.   A year after our wedding, we spent a month in Europe.   It was something to look forward to in a year.
