Vegan And gluten-free Diet....i Need Lots Of Help!

We are basically vegan vegetarian. My husband and daughter have dairy allergy. My son has egg allergy and celiac. So, now I have no idea how to cook! Popcorn and fruit shake is what I gave him last night for supper. I need so much help! How can I make healthy meals and still meet my families needs without cooking all day long????

Use lentils (brown, red, green), beans (garbanzo, black, pinto, navy etc.), rice, nuts, vegetables, fruits, rice milk, almond milk, quinoa, buckwheat, healthy oils, spices, Earth Balance...you can do so much with those ingredients. There is a vegan market near me and many of their items are actually gluten free. Pick up a raw foods cook book or vegan cook book and see how you can modify the ingredients to be gluten-free. Most of the foods I cook are gluten-free and vegan. I cook things like brown rice with lentils or black beans with veggies. You can do soooo much with vegetables. Experiment with new ones you've never tried before.

Are you actually vegan or is it just an issue with the eggs and dairy?

      I have not made my own juices but have made my own granola copycat recipe from Trader Joes Turmeric ginger granola. Have you made your own juices? blending vs cold pressed what is better?
