gluten-free Veggie "burgers"?

I take slices of peeled eggplant, dip in beaten egg (if you don't eat eggs, you could probably substitute smashed tofu or thinned out mashed beans), and then in a mix of corn meal, grated cheese, garlic powder, and crushed rosemary, and fry in vegetable oil on both sides until golden-brown and crispy.
