Question About Tortillas...

I have been on a gluten free diet for over a month now and for the first time in over 20 years I feel pretty good. I have not been tested but I have some relatives who are gluten intolerant and after closely following my diet I realized that I must be dealing with the same condition as others in my family. It is in fact a huge relief because for the past 5 years I thought that I might have MS because of many symptoms that I have had over the years. I had an MRI and other tests that showed I didn't have MS so I was back at square one. When I finally made the realization that it could all be due to what I was eating I was very excited. I'm feeling almost healthy for the first time in a long time. Creating meals is a bit challenging but something that seems to get easier each week. It certainly forces me to be creative which is good I think. The only thing I miss like crazy are flour tortillas. I'm a quessadilla junkie. I've tried the rice tortillas from the healthfood store and they are horrible. I've tried to make them on my own using different gluten free flours but so far it's been disasterous. I'm also avoiding corn too so can't have those tortillas either. If anyone has any suggestions for substitutes I'd sure love to hear of them. Thanks! :)

Bean Flour Torillas

1/3 cup light bean flour

1/2 cup cornstarch

2 Tablespoons tapioca flour

1/2 teaspoon salt

2 eggs or 3 egg whites, or 1/2 cup liquid egg subsitute

1 1/2 cups water

Oil for brushing skillet

In a medium bowl, place the bean flour, cornstarch, tapioca flour, and salt. Whisk together. Add the eggs and beat together until smooth. Slowly beat in the water. Let rest in the fridge for at least 20 minutes. Heat a 9" skillet or frypan over high heat, brushing with oil. Be sure it is hot enough for water to dance on the surface before starting to cook the tortillas. Spoon in about 4 tablespoons of batter or enough to cover the bottom of the skillet. Cook until the bottom of the tortilla is golden brown and the edges curl and the top seems dry, Turn and barely cook the other side.

was it the Foods For Life brand gluten-free tortillas that you tried? I thought those were pretty yuck too... But I found that Don Pablo's gluten-free tortillas were much more palatable... I was a tortilla junkie too... quesadillas, mmmmmmm now I just make my quesadillas on Mission corn tortillas... melt a tiny bit of butter in the pan first and fry the tortillas in that before adding the cheese... makes it pretty darn yummy IMHO...

Buy the corn tortillas. You can find those most places.

There is a bakery in Tampa Florida that makes gluten free bakery items. Our local health food shop orders from them and I love their Lavash millet and flax or spinach Lavash millet and flax. They are a flat bread that looks like a flour tortilla only you'll notice the whole grain goodness of the flax right away. I love them. They have a web site......Samisbakery.com.

If you have a Safeway, you can get Manny's corn tortillas which I find very good. I also buy Grimm's. No, they are not the same as flour ones, but you'll get used to the changing tastes with time. It really is all worth it because of how much better you feel.

Call me crazy but those Food For Life Rice Tortillas work for me. I buy them by the case and I love the taste of them. I admit they can be crumbly, but I found if I throw them in a 375 degree oven for about 30 seconds or so a side they get warm, soft, and pliable. I do everything with them sandwich wraps, dippers, even quesadillas. For quesadillas I load the fillings on one half and then fold it over and put a little olive oil in a frying pan and fry them up on each side to a golden brown.

...but, I realize I am in the minority for having the hots for these tortillas.

I must confess to loving them as well! I buy them by the case too.

I sprinkle cheese on a wrap and broil in the oven...comes out so yummy!

I like them too! I make quesadillas on a dry pancake griddle - no oil necessary. All my kids like them fine made that way - even the kids that can eat gluten. I also make turkey sandwiches, almond butter and honey sandwiches and burritos with them.

I like the food for life tortillas also. They fit perfectly into my quesadilla maker!! Mmmmmmm The smaller corn tortillas make things leak out the sides. <_<

It's too bad, Food For Life is not for sale in my province. Maybe one day I can enjoy them too.

Are there any brands of tortillas that are not made from wheat or corn, perchance? I thought of using rice flour instead of the cornstarch to make the bean flour tortillas, but I don't have time to do so much cooking!

Went gluten-free after high fat score results from Enterolab (291).

No celiac gene but two DQ1 genes.

Scope tests both normal, biopsies for celiac and Crohn's normal (on gluten-free diet).

La Tortilla Factory is a company that makes teff tortillas.... they're pretty good! I used to get them at Meijer, but haven't seen them lately. If you get on their website, you can do a search for a store near you.

Mission brand corn tortillas are great. they are the small ones, but they help with portion control! anyway, i love them for mexican pizzas, quesadillas, and even slapping 2 together for a regular "sandwich".

Available in the regular grocery store....i got 100 of them for $5 (4 packs of 25) popped in the freezer and i'm good for months....and they say GLUTEN FREE right on the package.

The food for life Rice tortillas are gross to me but the Trader Joe's Rice Tortillas are great for quesadillas.

As of late, rice has NOT been agreeing with me. Are there any tortilla recipes that are completely grain-free (as well as potato-free)? Could I sub the cornstarch for something else in the bean flour recipe?

Chebe mixes have a recipe for tortillas, I haven't made them but everything else Chebe I've made is so good

All tapioca so grain free!

Also have mild reactions to rice, I am on a rotation diet which helps with that. I also soak or ferment my rice whenever I can and that has helped tremendously

Not grain free but you could experiment with this recipe. Be sure to read all the comments posted. I made 1/2 recipe the first time then I used sorghum and Bob's Red Mill after that, I haven't made them for awhile. My dd loved them.
