Can you tell when baking soda/powder and corn starch are bad? I've had some that have been opened for awhile, but they aren't past the dates on the can/box. Just wondering if that's what was wrong with my cookies :)

I am not sure how to tell if Baking Soda or Baking Powder have gone bad- other than having your baked good not rise. Your cookies might be flat if they were over mixed or if the dough sat too long. Sometimes leaving can react early, which would cause a flat cookie. To avoid this, try mixing the cookie dough until just combined and placing unused dough in the fridge until you need it. This is just a guess as to what happened with your cookies. If the baking soda/ baking powder is within the dates, it should be fine.
