Soy Free, Dairy Free Cream Soups?

There must be a way, right? I want to make a creamy potato soup without dairy or soy. I was thinking that maybe I would use potato flakes (fake mashed taters) to thicken. Would that work? Say, if I mixed them with broth until just slightly thick? Has anyone tried this, or other tips?

I have a recipe for one but havent used it yet.

1 cup pregestimil powder baby formula (corn based)

1 cup white rice flour

2 tbsps dried minced onions

1/2 teaspoon pepper

1/2 teaspoon salt

3 tablespoons gluten-free, soy free powedered chicken or vegetable based (they sell it at our local health food store)

Blend 3 to 4 tbsp of mix above with 1/4 cup of cold water. Add 1 cup hot water and cook until it thickens.

Thin soup uses 3 tbsp and thick soup uses 4 tbsp.

Hope this helps :)

I would try the potato flakes too though since it would be alot easier. This mix is suppose to be nice because you can store it for long periods of time and use it frequently with just adding water.

pureeing veggies will work, yes, but what about using coconut milk?

not really, actually. unless that was the only ingredient, but in general, to the the creamy consistency, you wouldn't use enough to overpower the taste of the other ingredients.
