Quick And Nutritious Chicken And Rice Soup

I made this last night and it was awesome:

1 pound of chicken breasts bone in

1 Cup Gluten Free Brown Rice (not quick rice - regular brown rice)

1 Cup of carrots sliced

4 Celery stalks sliced

1 small onion

4 Cubes Gluten Free Boullion Cubes

Salt and pepper to taste

Chop onion and put into a medium saucepan with water... simmer about 10 minutes... add partially cooked chicken and juices, add boullion... simmer for about an hour... add rice and cover... simmer on low heat for 20 minutes... add carrots and celery, re-cover and simmer for another 20-25 minutes... remove from heat and let sit for about 15 minutes... serve...
