Thanksgiving Turkey & Gravy

Not only is this my first gluten-free Thanksgiving, but I'll be preparing/hosting for the first time in a LONG time. :blink: Anyway, the first of probably many questions is about cooking the turkey and making gravy. I've been thinking about using an electric deep fryer for the turkey, but then wouldn't have drippings for gravy. I could use a gravy mix, but so far every single one I've found has soy in it! Any ideas??? I can't have gluten, soy, casein, or eggs.

Either make stock before then (cook a whole chicken, reserve the bones/skin/trimmings, throw in a pot with a few vegetable bits, and make stock to freeze) or find a broth you can thicken with corn starch or sweet rice flour.
