Pancake Mix

Hi- I'm posting this for pink tulip.

My dad is on the gluten free diet. (his biopsy negative, great improvement with diet change) and I'm cooking breakfast for him tomorrow. The pancake mix I bought says to use honey, is it really necessary? I'd rather not if possible.

Hi pinktulip-

I'm not the master baker, but I think honey has added a lot of flavor and texture to gluten free mixes, but, doesn't taste 'honey'ish. (I don't like the taste of honey!)

If the mix says to use honey...I would probably use it. Gluten free mixes can be tricky, and they usually spend a lot of time trying to get it "just right" with specific ingredients. I've made a pancake mix that had honey in it before, if I remember correctly.
