Wedding Cake Questions

Hi, all!

I'm in the process of planning a gluten-free wedding reception (mine) for December. My mom wanted me to ask if there is any problem with tripling (or whatever math would have to be done) a cake recipe, such as Annalise Roberts's Coconut Layer Cake, which I have the recipe for and have read here that it's been used with great success. To me, common sense would seem to say that multiplying out the recipe wouldn't change anything, but we want to be sure.

Secondly, I've also read in previous threads that Carol Fenster has a wedding cake recipe, but I can't search inside the book on Amazon, so I don't know if it's in Special Diet Solutions or Gluten Free Celebrations. Also, I'm a little concerned by the rest of the title of Special Diet... because I only want to cut out gluten, not eggs, etc. Can anyone help me with this? Thanks so much!

I doubled and tripled Annalise Roberts's carrot cake for my wedding cake last Sept. I had a two 9" rounds, a 12" round, and a 14" round. I believe the 14" round took 3 batches of batter. I froze them all and frosted them when they were pretty cold.

Annalise created her white (butter) cake recipe for me. I was searching for a wedding cake type consistency and she worked and worked and worked and came up with that recipe for me!! She is such a sweetie. It is on page 37 of her cookbook.

It is AWESOME!!! I highly recommend it. My family (not gluten-free) begs for it at birthdays and special occasions.

      Hi Scott, yes I have had symptoms for years and this is the second GI I have seen and he could not believe I have never been tested. He called later today and I am scheduled for an endoscopy. Is there a way to tell how severe my potential celiac is from the results above? What are the chances I will have the biopsy and come back negative and we have to keep searching for a cause?

      I agree christina, there is definitely many contributing factors! I have the pain today, my pelvis, hips and thighs ache! No idea why. But i have been sitting at work for 3 days so im thinking its my back. This disease is very mysterious (and frustrating) but not always to blame for every pain.
