What Causes The Aftertaste?

Hello, gluten-free chefs,

I just tried the Namaste pancake mix and it was good (really spongy texture), but there is an aftertaste that somewhat tastes like anis (black licorice flavor) to me.

Does anyone know what ingredient is causing that?

Ingredients: Sweet brown rice flour, tapioca flour, arrowroot flour, rice milk powder, cream of tartar, xanthan gum, baking soda, salt, and ground vanilla bean.

I'm sure it's the Arrowroot. It's also used in gluten cooking for the flavor and all of those things have that mild anise-like flavor. You can also buy gluten-free Arrowroot cookies and the flavor is much stronger. I'm not a fan of that flavor, so I don't use it much.

Since I had the rest of the mix to use, I decided to use buttermilk instead of milk and that seemed to help mask the arrowroot flavor. Much better.

Now, if I could just stop getting bloated after I eat gluten free baked goods![/color]!
