Chocolate Tofu "pudding"

I just tried a new recipie from a free copy of VegCooking.com magazine/advertizement. It was amazing! I've used tofu alot in the past but in the area of desserts have only used it in a cheesecake.

Here it is. Enjoy!

1 1/4 lbs. silken tofu

3/4 c. semisweet choc. chips, melted

In a blender puree the tofu until smooth. Add the melted choc. and blend thoroughly. Pour into 6 individual bowl and chill.

Because tofu is rather perishable and there are only two of us,

I "halved" the recipie this way.

3/4 of a 12.3 oz. block of Morinu silken tofu in the aseptic boxes(the remainder put in a container with a little water bath for soup tomorrow) Place the block of tofu between two paper towels, on a flat surface, and place a weight on top. When the towels are wet, place in blender.

1/4 plus 2TB Enjoylife Choc. chips

Now I have to get out my Morinu cookbook and try other recipies like this. I've seen one using a filling like this in a graham cracker crust pie shell for a chocolate silk pie. A little Soytoo whipped "cream" on top, YUM!
