Flour Substitute?

I need some creative help. Can anyone offer me a suggestion for a flour substitute to put in my home-made gluten-free muffins? In the last few months I've eliminated all grains from my diet, but the one thing I really miss is my afternoon muffin with tea. This is quite challenging...I've tried to replace my gluten-free flour with what I've got in the house that is a similar consistency to flour (skim milk powder), but the results were very un-muffin-like! I'm starting to think that it's impossible to do ANY baking without flour of some kind...

what about nut flours, seed flours, coconut flour, potato flour, and so on? or buckwheat flour, which isn't technically a grain?

Ah, yes, potato flour...of course! And chickpea flour...they are available at Bulk Barn. But I've never seen coconut flour or any seed flours. I'll have to get on the phone. Thanks for these suggestions! :)
