I Had A Completely Yummy Dinner

My hubby and I made gluten-free fried chicken strips! Boy were they great!

I put one egg and one cup milk in a bowl.

Then, in a ziploc, I put:

1/2 cup each rice and tapioca flour

1/2 cup cornmeal (gluten-free)

paprika, salt, pepper, garlic powder, and onion powder to taste

1 tsp. baking soda

1 tsp. baking powder

Placed boneless chicken strips in the wet mixture, then shook in the bag, and placed them in the fryer! Yummy.

(I made sweet potato casserole too, as a side dish. I know...it sounds gross. But I've been craving it, so I was determined to make it this week!)
