Rhubarb Compote with Vanilla Frozen Yogurt

I love Rhubarb!!! :)

You can use Vanilla soy dream or whatever your diet and tastebuds require lol

Remember to read the labels first...

10 large stalks rhubarb (peeled and cut into 1 1/2" chunks)

3 tb sugar

vanilla frozen yogurt

Place the broiler rack to 8" below heating element. Preheat the broiler.

In a medium bowl, toss together rhubarb and the sugar. Spred evenly over a large non-stick baking dish or jelly-roll pan. Broil, stirring once, for 25-30 minutes until very soft but not burned. Remove from the broiler and stir.

Put 1/2 cup of frozen yogurt in each of 4 dessert dishes. Spoon equal portions of rhubarb over the top and serve.
