My son would be so happy if there was gluten-free tortellini!! I probably could try to make it by hand, but I have never tried. I have had one too many gluten-free baking failures, I guess...LOL!

Have you looked into GLUTINO noodles? They have uncooked noodles that taste just as good as or better than the real thing.... they have 3 or 4 kinds... whole foods has them ... they are not real expensive . but they so far have been the best.
