Yummy Banana Bread

Here is my yummiest banana bread. It is just the old recipe I used to use, but modified w/ Pamela's Pancake & Cookie mix. Enjoy!


3c Pamela's Pancake & Cookie Mix

1/2 tsp salt

2/3c butter

1 1/3c sugar

2 eggs

2c mashed banana

1/2c sour cream

1c chopped nuts (optional)


Preheat oven to 350. Grease pan (I use a glass cake pan) and flour the bottom (I use cocoa because it has the consistency of regular flour). Stir together the salt and flour mixture. In a separate bowl cream the butter and sugar until light. Mix in the eggs one at a time. Mix in the mashed banana. Add the flour mixture in thirds, alternating with the sour cream and ending with the flour. Stir in the nuts (if wanted--we usually don't, but crushed walnuts work well). Pour into prepared pans (or muffin tins) and bake for 35 minutes or until the center tests done.
