How Long Does "glutening" Last

I think that I ingested some gluten by accident on Saturday night for supper (that been four days ago now.) It was a sauce on a pizza that I just love. I brought in a gluten-free crust, and 99% of the ingrediants are fresh, but I forget that white sauces often contain flour.

I realized my mistake 12 hours later with the severe stomach cramps, but other symptoms showed up before that. I have been tired, grumpy, and have felt generally crappy until sometime today, 4 days later.

Can the symptoms last that long? Or am I dealing with another food intolerance? I know that dairy can throw me, but since I started my unofficial gluten free life, 2 years ago, within a month or two, I wasn't lactose intolerant anymore.

Oh and does anyone else have ear ringing issues? It went away for awhile, but came back again.
