Easy Gluten-free Peanut Butter Cookies

I'm sure you've all heard about this, but thought I would share just in case. This is a really simple recipe that my MIL told me about and I never made it until I went gluten-free.


1 cup of peanut butter

1 cup of sugar

1 egg

Mix above ingredients together with a spoon (no mixer required), roll dough into small balls and flatten with fork making classic crisscross pattern. *Note* you can also roll the balls in sugar before flattening if you prefer.

Bake at 350 degrees until slightly browned and that's it! Everyone else in the family loved them!

Yep, this is a great recipe. My 13 year old son made them yesterday.

You can also add 1/2 tsp. baking soda and about 2/3 C chocolate chips or M & M's.


Started Specific Carbohydrate Diet on 8-16-09 because son was diagnosed with Ulcerative Colitis and want to give him moral support.
