Gluten Free In Latin America

Hello all! Hola a tod@s!

I wanted to start this topic to see if there is anyone with experience living gluten-free in latin america, or any tips on doing so. I live in El Salvador and recently was told to go gluten-free once by my doctor. Off the top of my head, I can think of some pros and some cons of living in El Salvador and trying to be gluten free.

Pro's:

-Corn, rice, and beans are a breeze

-Fresh fruits and vegetables are easy to find

-There are sweet-breads made from rice and yucca flour

Con's:

-Not likely to find ingredients lists on a lot of foods

-Really hard to find specialty cooking items (spices, yeast, special flours, corn meal, etc).

(This means that I can


-Diagnosed by doctor "gluten intolerant" without any tests, based on symptoms in 2008. Gluten-free since then.

-Currently awaiting tests to see official diagnosis.
