Looking For Ideas For gluten-free/df/healthy-ish Food

I've decided to start eating dairy free, and am feeling the loss of cheese heavily. Any good recipes would be appreciated. I dug up tarnalberry's post with all those recipes, and those have been good. Just wondering what other DF-ers do. I'm pretty comfortable cooking/baking with milk subs (almond, soy, rice milk). Just looking for some variety. Also trying to lose 15 more lbs (10 down!!!!). So if anyone has any good recipes that taste like dessert, but are healthier, hook me up ;)

One more thing, I don't do much with beans b/c they bloat/gas me <_< Other than that I'll try pretty much everything. Just gonna be cooking for me, still making husband his "normal" foods (not DF).

Also avoiding: potatoes, beans, crucifers, popcorn, most red meat, coconut milk :(

Started eating a Paleo diet Spring 2011. Love it!
