Greek Lamb Pilaf

Found and tried a naturally gluten-free recipe in this months Cooking Light. It calls for ground lamb, which we couldn't find. We used ground beef instead. Still yummy, and it reheats well. Even better - a one pot meal.

Rice, carrots, onion, meat, mint, parsley, lemon juice, chicken broth, tomato, cinnamon-y goodness.

I heart lamb... bummer you didn't find any at your store. If you like Greek food I just posted a recipe for Tzatziki (Cucumber-Yogurt dip) which would be YUM with this recipe! :):):)
