Blue Corn Hoe Cakes

Gluten Free, Soy Free

1 1/2 cups blue cornmeal

1 1/2 cups water

2 tb sugar

big pinch kosher or sea salt

3 tb butter

Preheat oven to 400F

In a medium saucepan, bring water to boil, stir in salt, sugar, butter and cornmeal. Cook until thickened, stirring constantly, then drop large spoonfuls onto baking sheet.

Bake until evenly browned.

Serves 4.
