Potato Pizza

I found a great recipe in The Kid Friendly Allergy Free Cookbook that we tweaked a little, and it was sooooo good I wanted to share.

Basically, you spread a thin layer of hashbrowns tossed with a little olive oil(I shredded 3 potatos--but we only used a 8 x8 pan) in a non-stick pan, bake that for about 15 min. at 450 (until the edges are crispy and brown).

Meanwhile, we diced up yellow squash and zucchini, and tossed them with basil, oregano, a teeny bit of garlic and olive oil

Pan out of the oven, spread with mozzerella, then put the veggies on top, and return to the oven until it's all melty. My kids -- who are not zucchini lovers -- asked to have it again tonight.........

I like to make Pizza Potatoes in the crock pot. I cut potatoes in thin slices, put them in the crock pot, then pour pizza sauce over them and add pepperoni and mozzarella cheese and let them cook for a few hours. It is really good. :D
