Strawberry Muffins

Recommended Posts

I made strawberry muffins tonight--I was trying to make something different and I needed to use up some strawberries. It's a combination of a few recipes I've seen online. They're pretty tasty. I think you could sub in any fruit, nut, or chocolate chips. Next time I plan to vary the flours for something more nutritious, and maybe add some flax seed meal. I'd also like to try it with diced strawberries, but I did the puree for now b/c DD is a little funny about textures when trying new foods.

Strawberry Muffins

2 Tbsp shortening

1/4 c sugar

2 eggs

1/2 cup brown rice flour

1/2 cup white rice flour

2 tsp baking powder

1/4 tsp salt

1/2 c milk (I used whole b/c we're still calorie boosting for DD, I'm guessing skim would be fine)

1/4 tsp vanilla extract

1/2-3/4 c strawberry puree (sorry, I'm nt sure how much I used, I just pureed a big handful of strawberries and added them to the batter)

Preheat oven to 350. Blend shortening and sugar, then add eggs and mix. Add flour, baking powder, and salt and mix. Mix in milk, vanilla, and strawberry puree. Makes 36 mini-muffins--bake for 14-15 minutes. I'm guessing regular size muffins would bake for 20-22 minutes. Enjoy!

Oops- I'm sorry, I forgot to include 1 tsp xanthan gum in the ingredients...and I'm having trouble figuring out how to edit my post.

Thanks! I love recipes like this--simple without a ton of different flours and using ingredients I tend to always have on hand.

I'll try it with blueberries (strawberries don't like me :D )

Thanks again!
