Featherlight Flour Blend

What purpose does the 1 tablespoon of potato flour (starch?) serve? It seems to me (and I've never mixed up this blend and am new to baking in general and gluten-free specifically) that it's such a small amount and would get "lost" in the large volume of the other components of the blend. Thanks.

Yes, I often leave it out and suffer no negative consequences. ;) I mix my own featherlight mix 12 cups at a time and that 4 TBSP of potato flour does not really seem to make a difference.
