Lost Zuchini Bread Recipe

A month or so ago I made some zuchinni (am I spelling that right?) bread that was great. My DD loved it. All I can remember is that it called for applesauce. I probably used crushed pineapple instead. I often do that. It did not call for a lot of oil, but that's all I can remember. Does this ring a bell for anyone? I'm open to any recipe, but I prefer those that do not call for 2 cups of sugar and 1 cup of oil in each loaf. I've got a couple zukes sitting on my counter and want to do something with them before they go bad.

I make mine into muffins, but you could do bread, just cook longer: They are so moist and you'd never know there's only 1/4c sugar.

3/4c egg whites or 4 whole eggs

2c finely shredded zuchini

1/4c sugar

1 tsp cinnamon or pumpkin pie spice

1 tsp vanilla


mix those well

add 2c Pamela's baking mix**

mini chocolate chips if desired (I desire :P )

mix well

bake 350, for 25 min for muffins, not sure for bread, maybe 40 min... I do know with the muffins, you really can't overbake them (unless you burn them :huh: )

**you can use whatever flour mix you have, but then you'd need to add in the oil (about 1/2c as well as baking soda, powder and salt)

Thanks a lot! These look great. I have some Pamela's mix so I am all set. I too will add the chocolate chips. Everything is better with chocolate! B)

      Celiac Emotional Healing Support Group
      Again you are invited to join Johnny Patout, LCSW for Baton Rouge's first emotional healing support group meeting to assist those living with celiac disease manage the emotional challenges so many of us face. Most often the emotional disturbances include depression, disinterest in normal activities, insomnia, grief, mood changes, anxiety, inability to concentrate, extreme concern about managing a gluten-free lifestyle and other emotional and behavioral challenges.
      The professionals at Jamestown Avenue Counseling Center created the emotional healing support group to give us a safe place to begin to process our emotions and support each other as we heal emotionally while managing celiac disease and the resulting autoimmune disorders.
      The emotional healing support group meets every Thursday, 6:00-7:00pm, at the Jamestown Avenue Counseling Center of Baton Rouge. Jamestown Avenue Counseling Center is located at 4637 Jamestown Avenue, Baton Rouge, Suite B-1. Suite B-1 is upstairs.
