Hello everyone, I am from Sioux City. My son was just diagnosed with celiac about a month ago. My other two kids have to get checked with a biopsy in December for celiac. Well, I am actually going to a doctor here tomorrow to schedule a biopsy for myself :( I thought one was hard enough with celiac disease, I can't imagine all of us. My husband of course, won't get tested for it. I will let you know how the doctor is for me. I know someone asked about a doctor from Sioux city. The doctor I was referred to is actually in Dakota Dunes, south Dakota, which is like maybe 1 or 2 miles from Sioux city. Well, hope to get to know all of you.

@shadycharacter, did you mean to reply to another post about sourdough bread? The present thread isn't about that.

Thanks for your response. It seems to be only with gluten, illness, or vaccination.

Welcome to the forum, @LimpToeTheTimeless Bone growth plates close in the late teens to early twenties, so it's doubtful you'll grow much taller, but you may start to bulk up in muscle.  Remember to boost your absorption of vitamins and minerals needed to build muscle by eating a nutritionally dense diet and supplementing with essential vitamins and minerals, especially Thiamine B1, to counteract the malabsorption caused by Celiac Disease. Keep us posted on your progress! Fermentation breaks down some of the gluten in wheat. Nowhere enough for a wheat dough to become gluten free, but the gluten may be significantly reduced. I think some pizzerias make the dough the day before and leave it overnight. The longer the microbes are acting on the flour, the better.
