Flour Blends

Hi everyone!

Okay this is my situation...

I cannot have tapioca flour/starch but it seems that so many flour blends call for this ingredient. I do understand that Cornstarch and Potato starch can be subbed (did not do well with arrowroot powder). I have subbed with Corn/Potato starch in recipes but when it comes to the blends that is where I am getting confused so I have been staying away from recipes that call for Gluten Free Flour Mixture.

For example (sorry only cookbook I brought to work to look at, at lunch today):

Connie Sarros has a blend in her Reduced-Calorie Cookbook

2 1/2 Cups Rice Flour

1 Cup Potato Starch

1 Cup Tapioca

1/4 Cup Cornstarch

1/4 Cup Bean Flour

2 Tablespoons Xanthan Gum

Question:

What do you do when the blend already has Cornstarch and Potato Starch in it? What do you sub the Tapioca with more of the Corn or Potato Starch?

Has anyone found any good blends to make?

Thank you so much for any information. I have been passing up on some interesting/yummy looking recipes due to this problem. Starting to get the hang of the flours some but still learning about the blends. I bought Cooking Free recently and have been reading all of the front portions of the books I have to learn more and any sites I can find that explain gluten free flours.

I use the following gluten-free flour blend for all of my baked goods with great success.

ALL-PURPOSE GLUTEN-FREE FLOUR BLEND

(Substitute Cup for Cup of Wheat Flour in Recipes)

Double Batch

2 c. sorghum flour

2 c. sweet rice flour

1 1/3 c. cornstarch

2/3 c. potato starch

2 tsp. xanthan gum

Triple Batch

3 c. sorghum flour

3 c. sweet rice flour

2 c. cornstarch

1 c. potato starch

3 tsp. xanthan gum

      Hi Scott, yes I have had symptoms for years and this is the second GI I have seen and he could not believe I have never been tested. He called later today and I am scheduled for an endoscopy. Is there a way to tell how severe my potential celiac is from the results above? What are the chances I will have the biopsy and come back negative and we have to keep searching for a cause?

      I agree christina, there is definitely many contributing factors! I have the pain today, my pelvis, hips and thighs ache! No idea why. But i have been sitting at work for 3 days so im thinking its my back. This disease is very mysterious (and frustrating) but not always to blame for every pain.
