Does Anyone Remember Trader Joe's Sweet Rice Flour?

Several years ago Trader Joe's carried Sweet Rice Flour. It came in a pink or purple package and had the best gluten-free pancake recipe on the back. I know I cut it out and saved it but I can't find it now and really want it. Does anyone have a copy? I've tried at least a dozen recipes and haven't been able to find a taste that is similar to that one.

Here it is.

RICE FLOUR PANCAKES

1 Cup Sweet Rice Flour

1 Tbsp sugar

2 tsp baking powder

1/2 tsp salt

1 cup rice or soy milk

1 egg, lightly beaten

2 tsp olive or vegetable oil

Sift the rice flour, sugar, baking powder and salt together into a bowl. Beat in the rice milk until the mixture has a smooth consistency. Add the beaten egg and olive oil and mix until just blended.

Heat a non-stick griddle to 375 degrees or until it is hot enough that drops of water splashed on the griddle bounce and sizzle. Lightly oil the pan. Ladle the pancake mixture onto the griddle to form 4 inch cakes.

Turn the cakes once the bottoms have browned and bubbles appear on the tops. Cook the cakes for an additional two minutes. Serve the pancakes with warmed maple syrup.l Recipe will yield 12 pancakes.

      Hi Scott, yes I have had symptoms for years and this is the second GI I have seen and he could not believe I have never been tested. He called later today and I am scheduled for an endoscopy. Is there a way to tell how severe my potential celiac is from the results above? What are the chances I will have the biopsy and come back negative and we have to keep searching for a cause?

      I agree christina, there is definitely many contributing factors! I have the pain today, my pelvis, hips and thighs ache! No idea why. But i have been sitting at work for 3 days so im thinking its my back. This disease is very mysterious (and frustrating) but not always to blame for every pain.
