What do you use for a breadcrumb replacement? The only thing decent I found so far was by Schar. I'm looking for something close to the regular breadcrumb taste. Any success in this area? I would prefer not to make my own, as I did see the Chex recipe post. I will try those, but it would be really nice to be able to just buy a decent brand!

The best for breading IMHO, is to take a loaf of the EnerG bread and process it-makes nice fresh breadcrumbs that fry up light and crisp and stay light in things like meatballs. If you want it more like panko texture, process it a little less than you would for finer crumbs. I process a whole loaf and then store it in the freezer. We buy whichever variety of the EnerG breads is the cheapest. Some of the gluten-free breads and breadcrumbs end up very hard.
