Gluten-free And Dairy Issues?

My daughter was diagnosed celiac at ~12months old. We didn't do a scope but put her on a gluten-free diet. She has done very well and as I tweak things and learn more she is getting even better. She seems to have some dairy intolerances as well. She gets constipated (severely) anytime she has milk, cheese or yogurt. However, if the cheese is melted in a casserole (lasagna, for instance) she seems to tolerate it just fine. Do the properties of cheese change when it is melted??? Why would she be able to have melted cheese but not "raw" cheese?

perhaps she is just getting much less cheese if it's in a meal?

The protein changes when cooked, making it more easily tolerated.
