I love Pamela's Bread Mix, but my bread becomes moldy after 2-3 days. Any suggestions to prevent this? I keep it in a tupperwear container at room temperature. I don't like the idea of freezing bread, as it takes on a different taste.

Sorry but without the chemicals in it to keep it from molding you will need to keep in the refrig or freeze it.

I don't use Pamela's mix, but when I make bread from scratch, it lasts a week for me with just plastic wrap over the 8x8 pyrex dish.

I would suggest freezing part of it, double or triple wrap it and keep the rest in the fridge. Use the freezer bread for grilled sandwiches, toast or french toast.
