Quinoa Flour

I decided to try quinoa flour. I bought a bag of Bob's Red Mill. I thought it smelled bitter. I then decided to try a chocolate fudge cupcake recipe (on the back of the bag) and there is a strange bitterness to them. I did make them sugar free using erythritol and some stevia extract (non bitter) but I don't think this made them taste off. I have used that combination before in my bean cake and it is great. Anyone else not like it?

Did you use any other flours with it? I have used it before (onlyl once) in a bread recipe, but it was in combination with other flours and the bread was delicious. I don't think I would like it as a single ingredient flour.

No other flours mixed with it. Just nasty. I like to eat quinoa and I rinse it before I cook it several times. I bet it does not get rinsed before grinding.
