Help! Cupcakes & Muffins Are Gummy

For you experienced gluten-free cooks-every time I try to make a gluten-free, vegan cupcake I end up with a gumy, undercooked blob. The taste is good but the texture is way off. Any suggestions on what may be causing this and how to remedy it. I cook from scratch-no store bought mixes. I used Bette Hageman's gluten-free flour mix, xanathum gum, and egg replacer.

If you give me your exact recipe I can help you. Knowing all of the ingredients and amounts of each ingredient are important.

I would first guess that the xanthan gum may need to be cut back... but without reading the recipe i cannot say that for sure. show us the recipe and we'll all be more help!
