Gluten free crab cakes-

Now THAT is a bit of marketing genius- having grown up eating homemade crab cakes and wondering why is it as an adult that the commercially made ones have this bread junk in it when real ones don't - use egg as a binder instead. Or cornmeal, as you would for fish or hush puppies. I pulled up a recipe off the internet the other day that was for gourmet fish cakes that was not marked as "gluten free" but made with a ground almond crust, too. Amaranth and sorghum, half and half, also makes wonderful fish breading that is cornmeal - like.
