Banana Bread Recipe

I used this recipe: http://glutenfreeday.com/?p=447 I made the following changes: I used the left over almond "pulp" from making almond milk for the almond meal, use brown sugar, used 1 cup of mashed banana that I had in the freezer, omitted the cardamom because I did not have any, used 1/8 tsp. of salt and nutmeg, and coconut oil. I decided to add a streusel topping so I took the left over almond from above and mixed in some sweetened flake coconut, brown sugar and earth balance spread (wish now I had used more coconut oil) and spread it over the batter (I made it into muffins). I didn't really measure just winged it. I baked them appx 25 min. or until a tooth pick came out clean. They are really good. I will make these again for shure.
