Child Friendly Rainbow Fruit Jelly/jello Cups

Ingredients:

1 kiwifruit

5 strawberries

1 apple

1 pear

2 nectarines

1/2 punnet blueberries

6 tsp unflavoured gelatine powder

1 litre fruit juice

Plastic drink cups and spoons

Method:

Prepare the fruit.

Peel kiwifruit, quarter lengthways and slice.

Remove top from strawberries, halve and slice.

Dice apple, pear and nectarines.

Dissolve 3 tsp of the gelatine in 1/4 cup boiling water.

Whisk well until dissolved.

Cool for 5 minutes then stir in 2 cups of juice.

Spoon some of the prepared fruit and blueberries into the base of each plastic cup.

You can use a mixture of fruit if you like.

Pour a cup of juice over fruit to cover.

Place a spoon into the juice.

Chill in the refrigerator for about 20 minutes until set.

While the first layer of jelly is setting, dissolve the remaining gelatine in boiling water as before.

Repeat layers of fruit and jelly
