I bought the second edition and I am so impressed!! She says to use brown rice flour for her mix, but I used white rice flour and didn't notice anything amiss. I've made HOME-MADE muffins!! A cake!!! pop-overs... which for you english people... I added a bit more water and had... YORKSHIRE PUDDING!!!

I HIGHLY recommend this book,. but don't eat the stuff all the time or you'll totally pork up:) but it's nice to be able to enjoy a baked treat now and then!

I recently bought this cookbook and have only tried one recipe...the Traditional Pie Crust. I was less than thrilled with it. Rolled it out fine but it completely fell apart when I tried to put it in the pie plate. I ended up patching it up and pressing it into the pan.

I didn't care for the taste of the crust either. Maybe it was because I used the brown rice flour mixture she recommended. I doubt I'll try this particular recipe again but will try white rice flour for some of the other recipes. Thanks for the positive review of some other recipes! smile.gif

I have the cookbook as well. Tried one cake recipe. Didn't like it. Haven't used it since. Maybe I'll try it with the white, too, then. Hope I have better luck.

My guess is she says brown rice flour as it has more nutrients. I have that book on my list for christmas...hmmm...wondering if I will like it!

I've had this book for years and it is my absolute go to when I need an amazing baked good. I use the Authentic Foods Superfine Brown RIce Flour like she suggests. In fact that is the only type of rice flour I use since finding her book. I've made tons of recipes from her book - pie crust, coconut cake, gingerbread cookies, sugar cookies, etc. I always get RAVE reviews and utter shock when the gluten eaters learn it's gluten free. I constantly get requests from people asking me to make the coconut cake.

When I recommend one gluten free baking book to people, this is the one.

That's why I bought another coffee grinder and it has a larger capacity than the one I've used for coffee. I think she also mentions using a blender to get a finer grind of brown rice flour.

I haven't seen brown rice flour at my Asian store but they recently moved and need better shelving so were very low on any rice flour when I was last in. I did buy sweet rice flour (i.e., glutinous rice flour) and it was dirt cheap.

Do they have teff flour at your Asian store? I didn't see any when I went to mine. The sweet rice was $1.37 for 16 oz. Was that about what yours costs?

I never saw any teff flour there but I had only been in just once (right after diagnosis) before they moved to their new location. I paid $1.50 for 16 oz. for sweet rice flour so I guess "cheap" is relative. I have ordered ivory teff from Open Original Shared Link (recommended by RiceGuy some time ago). Their prices are great but then you have to add in shipping.

Since their move they've had very little flour in stock but they said they need new shelving. They were supposed to let me know what kinds of flours/starches they are able to get. Unfortunately they never got back to me. I'll ask again next time I go in.

Asian stores may not carry it. I got mine at Whole Foods. It's brown. Tasted great!

I make up the flour myself... I bought all the stuff from the asian grocery... Dirt Cheap! I had a hard time with the pie crust the first time... but the second time it turned out nice... I'm not a big crust person but I liked it. My favorite so far is the banana nut muffins.

I did the ginger bread cake and didn't like it as much as the real stuff... But a little tweaking and I may get it right ;)

the rustic apple tart was nice.

the corn bread came out nice.

That cookbook is on my kitchen counter right now...just waiting for me to make the Basic Sandwich Bread. I really should measure out the dry ingredients tonight. It makes it so much easier to get a head start tomorrow.

I will definitely grind my brown rice flour again to see if I can get a really fine grind.

Thanks for the reminder. I'm going to put the extra coffee grinder you suggested on my Christmas list. Last year got a springform pan, well three nested ones that have yet to use :)Will get around to it eventually.

Well, I looked at the bread recipe and the two bread flour mixes don't even call for brown rice flour. Oh well, as long as I took it out of the fridge, I might as well grind it finer. laugh.gif

I was thinking of adding a coffee grinder to my Christmas wish list but decided I wanted to buy my own so got one that holds a lot more than my regular Krups coffee grinder.

Basic Sandwich Bread update:

I made this bread today and it is good. It could use a bit more salt. I was surprised that the recipe didn't call for vinegar. But it did call for a tsp. of unflavored gelatin (I used Knox). I also used Bread Flour Mix B for those who have this cookbook. It rose well (yes, I was surprised) and I followed the directions to a "T" except I used a glass Pyrex loaf pan and baked it at 375

Another update - Disappointment!

I had such high hopes for this bread. The first day it was tasty and made a good sandwich. Then I froze two slices per sandwich bag and had another blah sandwich yesterday. These gluten-free breads are always such a problem for me. Boo hoo! I bet anything that it would make a really good grilled cheese sandwich or a Monte Cristo. Only problem...I'm avoiding cheese. ph34r.gif

It toasts beautifully and would also make good French toast. So while my expectations were not met, it's perfectly edible, just not in the form I wanted it. sad.gif

So I guess the next time I go to the health food store, I'll shell out $6.19 for a loaf of Udi's.

      Thank you so much, everyone. For the moment my doctor just has me taking iron but hopefully we can reconnect soon. I'm going to look into genetic testing, too. Great advice all around and I appreciate it--and you can bet I'm going off the PPIs!

      I walk fast for fitness, 4 to 6 km per day. I am also 74 years old. Apart from the Celiac challenge, my lifestyle is healthy. I had a sciatiac nerve pinching under my one foot, with inflamation in my whole shin. It was almost cured, when the other shin started paining and burning. I do stretches, use a natural cooling gel and rest my feet. Can Celiac cause muscle pains/inflamation, or is it just over-excercising?

      I recently started shopping at a nearby Trader Joe's store. I was surprised at the number and variety of (healthy) gluten-free options sold there. I must admit their low prices are also quite tempting. However, I am curious as to the labeling on all their packages. While none of their products are certified as gluten-free, many are identified as 'GLUTEN FREE' on the packaging. Are these items safe for celiacs? Has anyone tried Trader Joe's products and have there been any adverse reactions?

      HI, my doctor suggested one week of consuming gluten before blood tests.  I have been gluten free for 3 years.  Has anyone been through this and will I get exact results after one week of consuming gluten?  I don't even know if I can do this, if I get sick I am not sure if I can continue, any suggestions??  Thanks in advance.
