Tonight we popped a can of Christmas George (ham) and baked some taters in the microwave and I roasted some asparagus. I even managed gravy for the taters. It took all of 15 minutes to make and was super delicious.

Salads, chicken and roasted potatoes. As long as he doesn't get tired of this potato thing I think I'll just keep them coming.

Mmmm spinach. Good luck with that one SIW. I have just got back into it and like throwing a handful in at the end of a stirfry to make a kind of sauce.

Addy, I think you must get a persistence award on the vegetable front :)

    Still angry this morning

Last night was some really yummy parsnip garlic fries my hubby made me -- unfortunately I ate them ice cold because son had a late lab at college so I ran over to pick him up after running errands for my folks and sister.....son got down to the parking lot without his bike :( -- I knew right away - F**K - sorry all -- it was my "Black Beauty" Specialized Hybrid and the only road bike I can ride right now because my shoulders and wrists won't let me ride racing bike.....oh and by the by -- Hubby's jobsite got hit on Sunday night - we lost hundreds in power tools and the site lost thousands in materials -- I HATE THIEVES!!!!  Ok, rant done...for now ;)

Dinner tonight will be huge hamburgers on udi's bun and I am going to eat the flipping bun - well maybe.  Another batch of parsnip fries -- they were good cold so I am going for a re-do to get them while they are hot.

Large batch of sinful brownies will also be made -- younger son heading out backpacking for a week so I must provide the necessities :D

What the hell kind of person steals a freakin bike? I'm sorry. And don't be sorry, I'm pretty sure the reactions would be mostly the same most of the way around. Maybe they'll catch the jerk and find your bike.

Taco fixings on a baked potato for dinner tonight followed by a taste of the chocolate velvet cupcakes I made for my daughter tomorrow. She is 6 1/2 and just got invited to her first not family birthday party at a ceramics place!!! We are all very excited for her.

Hi Lisa, I've tried spaghetti squash, it's expensive here (UK), and all i ever got was stringy mush.....so I gave up on that, lol.

I've done courgette and carrot 'ribbons' with a peeler, they're OK......used a mandolin to make jullienne also. The reason why I'm hoping the spiraliser will be better is that it will make 'noodles' that are thicker than I can accomplish with a peeler and longer than those I can make with a mandolin...if that makes sense.

Yep...that makes sense and I'm looking forward to hearing how your new gadget works. Spaghetti squash took awhile for me to master - seems like it would be simple - and is now -I buy large quantities when they go on sale and keep in our storeroom that stays cool like a basement or root cellar.

Ill post how to cook them when I'm back on my laptop.

Well, i decided to retry my alfredo and spinage goodness in two parts. I retried the alfredo sauce, and outside of the mild acid reflux, i am happy to note that my body does just fine with it. That was... 3ish hours ago?

Though i might go make a corn tortilla with a little honey butter on it.  Kinda got a low blood sugar thing going on at the moment (jidders).

I think I expressed my outrage about the bike thief clearly enough over email, but I'll add one more &^%$! to the tirade.  asshat thief.

MINDWARP

Having some continued success adding foods back in down here, (brown rice and all fruits seem okay) but still unable to tolerate the high histamines ( aged cheese, alcohol, vinegars, cured meats, chocolate) . I can do a bit, but if I do too much in one day, symptoms come back.

Like you, I remain ever hopeful.

LOVE2

Loved,  loved,  loved your email about the new guy in your life. Bingley is a perfect name and I am so happy he has adopted you guys! ;) Much happiness with your new fur baby, hon!!

Dinner last night was a Greek salad (made by me) accompanied by grilled steaks and some (gluten-free of course) almond macaroons.

But I did not have to cook! yaay!

The management of the hotel/cottages does a 'welcoming dinner for the residents. The owner and his wife have a son with Crohn's (but they suspected celiac and he was tested for that, so they "get" it). He assured me the only herbs/spices on the steaks would be McCormick's.  :)

A singer/guitarist played for 4 hours while people ate, drank, and chatted. (and sang horrible renditions of "Wasted Away again in Margaritaville)   ) The guests are from all over the US, Canada and Europe and they started off with a giant "pot luck" appetizer table. They all ate mini hot dogs wrapped in dough, crackers and cheese, packaged cheese spreads and crackers, something that looked like fried dough balls?? Devlied eggs (which the hubs scarfed down) Honestly, I could not possibly have cared less for what they were serving, all that gluteny blech. When urged to eat, I simply said "Thanks, but that stuff will kill me"   Laughter ensued (must be my delivery? or they were drunk ) but some asked why?  I give my 20 second answer and today, I have people asking me more questions.  Celiac awareness takes no vacations.  :D Even the massage therapist grilled me and now, her hubs is getting tested.

The night before, we made a Chebe pizza with fresh vegs  --the produce stand nearby is just remarkable--and I enjoyed it immensely. Apparently, mozzarella is okay, but not parmesan--but that's cool with me. I'm happy just to have some "za".

My best friend, the chef is making traditional Corned Beef and Cabbage tomorrow  and I'll be bringing the Flourless chocolate cake, as she requested. I can whip that up in the AM.

I had Mahi-Mahi with coconut/mango marinade and brown rice couscous and herbs the day before that.

That's all for now. I have limited wifi, so I am sorry this post was so long.

I am working on a b%$@#in tan............... B) be good. xx IH

Loved your post, IH!!!  Love seeing people enjoying life and being happy.  :P

Happy Birthday to Me!  Tonight I am making:

- Seared bacon wrapped diver scallops that I first dip into a garlic butter mixture then roll in bacon, sear and then serve with a roasted chestnut and wild mushroom cream (dried mushrooms foraged in Croatia we brought home in October)

- Roasted spicy edamame beans

- Standing Rib Roast with a porcini/orange zest et. al. rub - will be roasting to a perfect 130.

- Roast baby potatoes in beef drippings

- I was going to braise pork belly but my back is not allowing it (I slipped on ice yesterday in the park and had a bad fall - landed on my left hip)

- Eton Mess for dessert (made the meringue and raspberry coulis yesterday so just have to whip the cream and layer with all sorts of berries and top with toasted almonds and toasted coconut)

The house smells simply sublime!  Can't wait til my husband comes home from work.  ;)

Happy Birthday Love2travel! Hope you have a great day.

Tonight we are ordering in from someplace that has a great track record with gluten-free, and they have a huge menu. We are having sandwiches, mozzarella sticks, pierogies and my hubby is getting me a cannoli because that is probably the one thing that I never stopped missing.

Sounds like IH is having a blast. Foodie dream for vacation, it sounds positively divine.

I got cauliflower in my basket today and I didn't want to do the same old boring crap with it. So I headed to google and found a fun recipe for spicy buffalo cauliflower. I was a little scared but it is super delicious. I made Frank's buffalo dip to go with it and an easy Christmas George for my husband again.

Happy Birthday, LOVE!!2 and my special wish for you this year (as it is for every single day) is for less pain. So sorry you took a spill. Make sure you get that inflammation down with " Ice, ice baby."

(if any of you recognized that as a song by Vanilla Ice from the 90's---well, you're old. )

The Redbridge will do for brining that beef, but J says you're wasting your time drinking it. (but he's an admitted beer snob, so take that for what it's worth)

I am impressed you still have some Christmas George and anything innovative with cauliflower works for me. Alone, it just tastes like....um, air.

Crazy (and totally wrong) Irish toast I saw recently. Given the proclivity for the Irish to have celiac (so much so that they dub it "celtic disease") I find it bizarrely ironic. (but I have a twisted sense of humor as you know)

Knew you guys would find it funny.Cheers!

Happy Birthday love2

Happy St Patrick's day everyone

IH it sounds like you are having a ball, fantastic.

So, I have confirmed that soy is not my friend. Tried gluten-free soy sauce last week and had bad tum. Tried a handful of fresh soy beans last night. I got got. Rashes on face, sore throat then cramps, bloating and exhaustion this morning. And I think I found the source of post nasal drip and persistent cough.

Lovely sunny day, family at in laws, feeling better this afternoon, so chilling and taking an afternoon off :)

Worry about dinner later...

Sorry you got "got". Darn soy.

I avoid it, too.Not hard to give up for me, really--not a soy fan, but it is pervasive.

I have used Coconut aminos for an adequate soy sauce sub. Just a suggestion.

I've adopted coconut aminos too. They aren't the same, but they work well in sauces and such. I also don't miss soy, I miss soy sauce! It drives me up a wall that soy is this "healthy" thing so it is everything. At least lecithin doesn't bother me. Yet.

I have 3 jars of George left. Friday night my husband brought home Easter George from work. (We figure every pig has two ham legs so there isn't a need for a new name yet.) They were selling fast, and so now I have to have a 20 pound ham in my fridge for the next two weeks. <_<

I managed to score a pretty small corned beef at the store last night, so that will be tonight's dinner. I got a ton of good veggies yesterday in my basket so it seemed silly to buy a head of cabbage when I have what is probably a week's worth of vegetables already other than potatoes. So, I think roasted potatoes and I'll probably decide at the last minute between asparagus and fried green beans.

Hi,   Not saying Thiamine (B1) couldn't be an issue as well, but Mg was definitely the cause of my problems. It's the only thing that worked. I supplemented with B vitamins, but that didn't change anything, in fact they made me sick. Mg stopped all my muscle pain (HCTZ) within a few months and fixed all the intestinal problems HCTZ caused as well. Mom has an allergy to some sulfa drugs (IgG Celiac too), but I don't think I've ever taken them. Mg boosted my energy as well. It solved a lot of problems. I take 1000mg MgO a day with no problems. I boost absorption with Vitamin D. Some people can't take MgO,  like mom, she takes Mg Glycinate. It's one of those things that someone has try and find the right form for themselves. Everyone's different. Mg deficiency can cause anxiety and is a treatment for it. A pharmacist gave me a list of drugs years ago that cause Mg deficiency: PPIs, H2 bockers, HCTZ, some beta blockers (metoprolol which I've taken -- horrible side effects), some anti-anxiety meds too were on it. I posted because I saw he was an IgG celiac. He's the first one I've seen in 20 years, other than my family. We're rare. All the celiacs I've met are IgA. Finding healthcare is a nightmare. Just trying to help. B

It sounds like you've been through a lot with your son's health journey, and it's understandable that you're seeking answers and solutions. Given the complexity of his symptoms and medical history, it might be beneficial to explore a few avenues: Encourage your son to keep a detailed journal of his symptoms, including when they occur, their severity, any triggers or patterns, and how they impact his daily life. This information can be valuable during medical consultations and may help identify correlations or trends. Consider seeking opinions from specialized medical centers or academic hospitals that have multidisciplinary teams specializing in gastrointestinal disorders, especially those related to Celiac disease and Eosinophilic Esophagitis (EOE). These centers often have experts who deal with complex cases and can offer a comprehensive evaluation. Since you've already explored alternative medicine with a nutrition response doctor and a gut detox diet, you may want to consider consulting a functional medicine practitioner. They take a holistic approach to health, looking at underlying causes and imbalances that may contribute to symptoms. Given his low vitamin D levels and other nutritional markers, a thorough nutritional assessment by a registered dietitian or nutritionist specializing in gastrointestinal health could provide insights into any deficiencies or dietary adjustments that might help alleviate symptoms. In addition to routine tests, consider asking about more specialized tests that may not be part of standard screenings. These could include comprehensive stool analyses, food intolerance testing, allergy panels, or advanced imaging studies to assess gut health.

Hello, I am a 45 year old mom, who was diagnosed at 29 with Celiac. My now 14 year old son was diagnosed just before his 4th birthday. Needless to say, we are old pros with the diet. He was experiencing some issues, overall health took a major plummet a year ago, and through a bit of work, was diagnosed with EOE. Tried diet alone, but his follow up endoscopy didn't show the improvements his DR. wanted to see, so I tried the medication. (Steroid). He became extremely backed up, and they had him taking Miralax daily. His health plummeted. He is a straight A honor's 8th grader who plays club soccer very competitively. His health continued to decline and at 13 had a colonoscopy and another upper gi. (He was still compacted even with the prep). I finally pulled him off all meds and mira lax, after reading much negative literature online, and put him on a gut detox diet and took him to a nutrition response dr. Finally things have improved. However...over a year later and he is having relapse stomach pain, debilitating stomach pain. Missing a day of school a week, to three this week. This is where we downward spiral with him. He says it doesn't feel the same as when he has gotten backed up before. He is eating prunes, taking his supplements, drinking water...all of the things. Yet, he is feeling horrible. Pain is abdomen, headache, lethargy, diarrhea . He is on a strict gluten dairy, egg free diet. He has adapted well in regards to diet. But I feel like we are missing something here. He is too active, too outgoing to be feeling sick all of the time. His Bilirubin is constantly high. His white blood count always runs slightly low. His vitamin D was very low last time he ran tests, (last month) when he was sick for a week. His celiac markers show negative, so it isn't that. His last endoscopy showed no Eosinaphils in his esophagus.  I have taken him to multiple Ped. Gastro specialists. They run tests, and we get zero answers. I meticulously go through labs, hoping to make some sense and maybe catch something. Any thoughts or ideas would greatly be appreciated.
    • trents
But if you have been off of wheat for a period of weeks/months leading up to the testing it will likely turn out to be negative for celiac disease, even if you actually have celiac disease. Given your symptoms when consuming gluten, we certainly understand your reluctance to undergo  the "gluten challenge" before testing but you need to understand that the testing may be a waste of time if you don't. What are you going to do if it is negative for celiac disease? Are you going to go back to merrily eating wheat/barley/rye products while living in pain and destroying your health? You will be in a conundrum. Do I or do I not? And you will likely have a difficult time being consistent with your diet. Celiac disease causes inflammation to the small bowel villous lining when gluten containing grains are consumed. This inflammation produces certain antibodies that can be detected in the blood after they reach a certain level, which takes weeks or months after the onset of the disease. If gluten is stopped or drastically reduced, the inflammation begins to decrease and so do the antibodies. Before long, their low levels are not detectable by testing and the antibody blood tests done for diagnosing celiac disease will be negative. Over time, this inflammation wears down the billions of microscopic, finger-like projections that make up the lining and form the nutrient absorbing layer of the small bowel where all the nutrition in our food is absorbed. As the villi bet worn down, vitamin and mineral deficiencies typically develop because absorption is compromised. An endoscopy with biopsy of the small bowel lining to microscopically examine this damage is usually the second stage of celiac disease diagnosis. However, when people cut out gluten or cut back on it significantly ahead of time before the biopsy is done, the villous lining has already experienced some healing and the microscopic examination may be negative or inconclusive. I'm not trying to tell you what to do I just want you to understand what the consequences of going gluten free ahead of testing are as far as test results go so that you will either not waste your time in having the tests done or will be prepared for negative test results and the impact that will have on your dietary decisions. And, who are these "consultants" you keep talking about and what are their qualifications? You are in the unenviable position that many who joint this forum have found themselves in. Namely, having begun a gluten free diet before getting a proper diagnosis but unwilling to enter into the gluten challenge for valid testing because of the severity of the symptoms it would cause them.
    • Fluka66
Thank you very much for your reply. I hadn't heard of celiac disease but began to notice a pattern of pain. I've been on the floor more than once with agonising pain but this was always put down to another abdominal problem consequently I've been on a roundabout of backwards and forwards with another consultant for many years. I originally questioned this diagnosis but was assured it was the reason for my pain. Many years later the consultant gave up and I had a new GP. I started to cut out certain food types ,reading packets then really started to cut out wheat and went lactose free. After a month I reintroduced these in one meal and ended screaming in agony the tearing and bloating pain. With this info and a swollen lymph node in my neck I went back to the GP.  I have a referral now . I have also found out that acidic food is causing the terrible pain . My thoughts are this is irritating any ulcers. I'm hoping that after a decade the outlook isn't all bad. My blood test came back with a high marker but I didn't catch what it was. My GP and I have agreed that I won't go back on wheat just for the test due to the pain , my swollen lymph node and blood test results.  Trying to remain calm for the referral and perhaps needed to be more forceful all those years ago but I'm not assertive and consultants can be overwhelming. Many thanks for your reply . Wishing you all the best.
