Last night I made egg rolls and pork foo young. That was an experiment and it turned out really good.Since I can't eat safely at most Chinese restaurants, I'm learning to do it myself,

Tonight it's beef stew with slaw and cornbread.

What kind of egg roll wrappers do you use?

Well  ...what would you call "an ingredients list and a temperature gauge/time frame for making meatballs"  when telling someone new to this how to make them? Directions? 

I would not call what I do to make them a "recipe" per se...it's not written down or anything and I have done it a thousand times, but the things we do so easily now were once taught to us too.

So, yes, I guess that's my "recipe" above. :lol:

To my meatballs I add a pamade which is bread chunks soaked in light cream. Lots of fresh thyme and freshly-grated nutmeg if they are Finnish or Swedish. And dried ground porcinis or porcinis that have been reconstituted in Port, Sherry, whatever. Sometimes Umami #5. And caramelized onions. But not all these at once!! Oh, and sometimes bacon or pancetta. Lots of garlic like Addy and a blend of veal, pork and beef chuck like Irish.

I guess I'm spoiled. I grew up with my mom at least attempting to teach me to cook. One of the things she actually did well was meatballs and she just always threw things in a bowl on top of meat til it looked good. She also makes killer mac & cheese. There were many more things though that she was not so awesome at. I preferred dinner at Grammy's house. :ph34r::lol:

I would not classified you as spoiled...but I did grow up in a home where I was not allowed to help with dinner prep -- I did however take note in every other kitchen I was exposed to.... seems to have stuck....

 

recipes are great for cookies, cakes, and even extra special dips....yet I am a little of this...little of that chef as my hubby is and now are kids... creativity shows best in FOOD.

 

PS...Shadow...I like that you asked how to make meatballs...I always ask how to make things....never stop!

We had cabbage rolls stuffed with ground venison, veggies  and rice.  My sidekick doesn't like cabbage, so I served him porcupine meatballs with sauce, and  he loved them. 

 

Homemade creamed corn, or corn puddin' as they call it in the South accompanied that.

My mom is a dreadful cook. I usually use recipes for baking but not for cooking. It just comes instinctively to some methinks. I am skilled at it. Numbers and accounting? No clue!!

 

My mom is what I call a "utilitarian cook". Basics. That's it.

No real use of herbs and spices. Nothing creative. And certainly, no garlic or cheese. No sauces or marinades.

No homemade dressings or baked goods. and yes, you read that correctly......my mom hates garlic and cheese (GASP!) Also, mushrooms, shallots, and wine.

I never had lasagne until I went to a friend's house.

Sour cream on/in/near  a potato? I was 18. and in a restaurant. 

Fresh asparagus or peas or green beans--at Gramma's house. We had canned.

Fresh veggies were "salad".

 

If I did not look so much like my Dad, I would have thought I was adopted as my joy for creating in the kitchen most certainly did not come from her. Even he made killer lamb chops or burgers. 

 

The one thing she made that was outrageous? Pie crust.  :( fortunately, we have found a way to recreate it! :)

And she can add a column of numbers in a jif. Me? not mathematical at all. To each our skills.

It's bloody hot here (I tell hubs this is "practice" for where we are going) and so, it may be KISS.

Use the encore pork tenderloin and make some quesadillas.

OK here I go again :) I thought I put this in here and accidentally posted it in the garden thread here we go :

 

 

I am going to be gone for a couple of weeks, I think I will make hubbs frozen dinners before I leave!! I am not sure yet how or what! (I have time) But It just came to me!! He is such a hard working man, and I go on Vaca for 2 weeks , the least I can do! He works 10 hr days, drives an hr. there and back, then also works on the weekends most of the time! SO i just came up with this idea!! I can make him at least 10 meals freeze them and he can heat them up for supper!!  :) What do you think? Any ideas?

Casseroles, chilis, or stews. Makes enough for several days..(yup, I saw Ski's response on the garden thread...and I agree completely!) :D

 

Here's one idea. Turkey Chili—fast, easy, delicious and full of protein and fiber. Takes @ 30 minutes start to finish. Ingredients:

  • 1 tbsp olive oil

  • 1 large onion, finely chopped

  • 1 red bell pepper, seeded and chopped

  • 1 stick of celery, chopped

  • 2 garlic cloves, minced

  • 3/4 pound fat-free ground turkey

  • 2 tbsp chili powder

  • 2 tsp ground cumin

  • 1/2 tsp oregano

  • 1/2 tsp ground coriander (if you don't have this—skip it)

  • 1 14 1/2-ounce can crushed tomatoes

  • 1 8-ounce can tomato sauce, no salt added

  • 1 15-ounce can black beans, rinsed and drained

  •  sour cream (optional) for dolloping on top

  • 4 tbsp fresh chopped cilantro to sprinkle in at the end.

  • Corn chips on the side

  • It can be served over rice, too!

Preparation:

Heat oil in a LARGE pot or Dutch oven. Add onion, celery, chopped pepper and garlic. Cook for 5 minutes or until onions are translucent. Crumble the turkey into the pan, breaking it apart with a wooden spoon. Cook for about 5 minutes or until no longer pink. Stir in chili powder, cumin, coriander and oregano. Add in tomatoes and tomato sauce, and simmer for 10 minutes, stirring occasionally. Add beans, mix well and cook on LOW heat for a further 5-10 minutes. Sprinkle in some chopped fresh cilantro.

Ladle into bowls. (Add a dollop of sour cream or plain yogurt on top if you tolerate dairy)

 

Freezes well.

My guys like to eat chili over pasta.  The corn pasta works the best if you want gluten-free pasta.  Maybe he would like to order gluteny pizza or McDonalds or Subway?

 

Lasagna freezes well and re-heats.  Cut it into small thin squares for better re-heating.

I like to freeze and reheat anything that is mildly resembling a casserole. I have an army of pyrex so I usually just make it right into serving size dishes that can go straight in the oven. Meatloafs also freeze really well, and he can just pop a frozen veggie into a container with a lid, add a bit of water and microwave until it is done. Or microwaved baked potatoes. Just takes a few minutes. I know that isn't exactly the whole meal in one dish, but it would give him a teensy bit of variety from casseroles. I second the idea of telling him to order out for pizza or something at least once or twice while you're gone. He can eat his poison while you aren't around, you won't feel deprived and he'll probably even have enough to have lunch the next day.

 

Yesterday we went to Costco to buy chicken and my husband discovered that they have their fresh pizzas on sale. So last night's dinner got pushed back to tonight. I still made my meatballs though because my meat was in the fridge all defrosted and waiting to be cooked. Last night I just cut up the last bit of roast and made a little gravy to go over some taters with veggies. I cup up the rest we didn't eat for the cat. <_<

 

So trying again tonight. Chicken alfredo for him and I'll have my pasta with butternut squash sauce and meatballs. It was all I could do last night not to just stand in the kitchen and eat all my meatballs, I was ravenous for no apparent reason. I stuffed my face with a bowl of chex instead and told my stupid stomach to shut up, it was not getting meat.

We had the brown rice pasta you turned me onto with vodka sauce tonight.  I found the recipe on Allrecipes, but subbed the  pork  with smoked chicken.  It was delicious.!

Totally locked up last evening outta the blue -- muscles just locked solid -- crazy -- hubs helped to bed where I had tri-tip and broccoli -- all better (well normal of late) this morning and thankful -- just had a soak -- now off to ride before the heat of the day....

 

Tonight out to dinner at a Fish Restaurant as it is our 26th Anniversary -- sadly I was deep in flareland this time last year so we are celebrating big tonight to make up for sleeping thru the Silver.

 

Very thankful this man has stuck by me each day -- and still looks at me this way on occasion :)

Last night I didn't make dinner plans and when I was standing in the pantry staring at thing my husband could tell I had something stuck in my head. He wouldn't let it go and finally I was like I just want a pizza like a normal person. I ended up ordering from Malawi's who does a pizza with a fresh tomato sauce, fresh basil and fresh mozzarella. I may have cheated a little and gotten a bit of pepperoni on it. :ph34r: They make their own crust so I understand that I'm taking a huge risk every time I get a pizza from there, and could have gone with another place that has a prepackaged crust but I like the fresh ingredients. (Even if the other place does do shrimp on pizza!)

 

Tonight is breakfast for dinner. He'll have sausage, and it is all natural, nitrate free and all that sort of nonsense so I'll probably at least taste it. Eggs, hash browns and pancakes. Or maybe buckwheat cakes, something like that anyway.

I am not sure what to do for dinner tonight!! We are headed up north to our Cabin!! He will be home soon!! And we are leaving right when he gets home! It is a 3 hr drive. By the time we get up there and get to a store, get home make dinner it will be late!! The store closes at 7. I am sure hubbs will "forget" and say lets order pizza! The other day I told him I have to do the noodles by timer now because I cannot taste test them for doneness he said ohhh I am sure 1 noodle isn't going to bother you!! I said like 1 touch of poison ivy won't bother me? He doesn't understand how bad it is!! He is supportive, but doesn't quite get it ..... So I will run to the store and get some Gluten free soup anyway huh? Maby thats what it will be for me when he wants to order Pizza :)

last night we made lobster mac & chz -- i loosely used love2's yummy recipe - subbing in smoked gouda and monterrey jack cheese.  it was yumssss - it's also what's for lunch lolz!  all the veggies we are harvesting from the garden and last night i asked what veggies he wanted to eat and he made a face.  so we were very bad last night and didn't eat our veggies!!!  running with scissors!!!  aaaaah!!!   :D

 

edited to add:  my grocery store mislabeled a bunch of (frozen) lobster tails - $5 for 2 tails so i bought ALL of them.  my husband is going "what are you doing?" when i just started throwing them into the buggy i was all like "SHHHH!!!  stop looking ! "  hahahaaaa

I would have bought all the tails too and I can't eat them...but would have madelobster treats for everyone!!!  Hubs used to have tons every year when there were still tons of lobster to be had and abalone were still extra large and legal here -- oh boy I miss having lobster for breakfast, lunch and dinner -- we actually got tired of lobster -- the horror :o

OMG I have this great image of you loading the cart, sunglasses on ,...music from a spy movie....lobster tails hanging out of every trench coat pocket, sticking out of your shirt where you have shoved them down there face first.......and speedily checking them out at the self-check register before the frozen food dept. manager realizes his magnificent blunder........and running to the parking lot..

 

 -- we actually got tired of lobster -- the horror :o

    It seems a Phoenix realtor Mike D’Elena is hoping that his trendy claim will catch the eye of a buyer hungry to avoid gluten, or, at least one with a sense of humor. D’Elena said he crafted the ads as a way to “be funny and to draw attention.” The idea, D’Elena said, is to “make it memorable.” 
    Though D’Elena’s marketing seeks to capitalizes on the gluten-free trend, he knows Celiac disease is a serious health issue for some people. “[W]e’re not here to offend anybody….this is just something we're just trying to do to draw attention and do what's best for our clients," he said. 
    Still, the signs seem to be working. D'elena had fielded six offers within a few days of listing the west Phoenix home.
    "Buying can sometimes be the most stressful thing you do in your entire life so why not have some fun with it," he said.

    Celiac.com 06/20/2018 - Currently, the only way to manage celiac disease is to eliminate gluten from the diet. That could be set to change as clinical trials begin in Australia for a new vaccine that aims to switch off the immune response to gluten. 
    The trials are set to begin at Australia’s University of the Sunshine Coast Clinical Trials Centre. The vaccine is designed to allow people with celiac disease to consume gluten with no adverse effects. A successful vaccine could be the beginning of the end for the gluten-free diet as the only currently viable treatment for celiac disease. That could be a massive breakthrough for people with celiac disease.
    USC’s Clinical Trials Centre Director Lucas Litewka said trial participants would receive an injection of the vaccine twice a week for seven weeks. The trials will be conducted alongside gastroenterologist Dr. James Daveson, who called the vaccine “a very exciting potential new therapy that has been undergoing clinical trials for several years now.”
    Dr. Daveson said the investigational vaccine might potentially restore gluten tolerance to people with celiac disease.The trial is open to adults between the ages of 18 and 70 who have clinically diagnosed celiac disease, and have followed a strict gluten-free diet for at least 12 months.     Celiac.com 06/19/2018 - Could baking soda help reduce the inflammation and damage caused by autoimmune diseases like rheumatoid arthritis, and celiac disease? Scientists at the Medical College of Georgia at Augusta University say that a daily dose of baking soda may in fact help reduce inflammation and damage caused by autoimmune diseases like rheumatoid arthritis, and celiac disease.
    Those scientists recently gathered some of the first evidence to show that cheap, over-the-counter antacids can prompt the spleen to promote an anti-inflammatory environment that could be helpful in combating inflammatory disease.
    A type of cell called mesothelial cells line our body cavities, like the digestive tract. They have little fingers, called microvilli, that sense the environment, and warn the organs they cover that there is an invader and an immune response is needed.
    The team’s data shows that when rats or healthy people drink a solution of baking soda, the stomach makes more acid, which causes mesothelial cells on the outside of the spleen to tell the spleen to go easy on the immune response.  "It's most likely a hamburger not a bacterial infection," is basically the message, says Dr. Paul O'Connor, renal physiologist in the MCG Department of Physiology at Augusta University and the study's corresponding author.
    That message, which is transmitted with help from a chemical messenger called acetylcholine, seems to encourage the gut to shift against inflammation, say the scientists.
    In patients who drank water with baking soda for two weeks, immune cells called macrophages, shifted from primarily those that promote inflammation, called M1, to those that reduce it, called M2. "The shift from inflammatory to an anti-inflammatory profile is happening everywhere," O'Connor says. "We saw it in the kidneys, we saw it in the spleen, now we see it in the peripheral blood."
    O'Connor hopes drinking baking soda can one day produce similar results for people with autoimmune disease. "You are not really turning anything off or on, you are just pushing it toward one side by giving an anti-inflammatory stimulus," he says, in this case, away from harmful inflammation. "It's potentially a really safe way to treat inflammatory disease."

    • If someone is doing an elimination diet and not having dairy for a while, would I still be able to eat some cheese since it is low in lactose? Or is best to give up any and all dairy during elimination trials?  Oh,and for cheese, I think it was the Cabot website for hard cheeses that mentions almost all theirs is gluten free. But sounds like most cheeses are.  Still, it can be nice when the company's website mentions it. 
    • Thanks, Ennis.  Do you know, is corn considered one of the top 8 allergens?  I am not sure yet if dairy bothers me, but if it does not, I still need to look for corn starch or corn syrup in ice cream.  Luckily, some Haagen Dazs seems to be corn-free.   Thanks for the links.  
    • As your vitamin d and iron levels are low it suggests celiac disease because if I am not wrong ,your iron levels is low without any reason.  To rule out confusion you should go for celiac gene test. Because if your gene test is positive then you should go for  biopsy of small intestines to confirm the diagnosis about celiac disease.   I also have heaviness,nausea and various other symptoms I am on gluten diet since one year and my gene test is positive for celiac disease and symptoms also suggest.  So, according to my knowledge your all symptoms will get better after you start gluten free diet if you have celiac disease or gluten sensitivity.   Best of luck! 
    • I would avoid those "noodles" starches = gas right now.
      I avoid most stuff like cabbage, broccoli in all but the smallest amounts (1 leaf or 2-4 sprigs) and cook til mush. I found higher density vitamin greens to be best to avoid wasting the room I had for food, stuff like spinach, kale, butter leaf, romaine all have much higher ratios of vitamin A and K then other greens with less sugar, starches, carbs. So you can cram more in there.

      Soups, during flares, I find using meat and herbs to flavor them best, I got a Pots de Herb blend that is nice from The Spice House, tested gluten free for me. But gentle herbs instead of spices...think of Italian and french cuisines. Bit of oregano, basil, rosemary, thyme, etc. Avoiding peppers, spices, and going very limited to no garlic and onions. Funny fact they make bonito flakes (dried fish) like Eden Foods, that makes a good fish flavoring if you boil them into water. Not now but later you can do this with coconut secret aminos,  wakame, or kambu for a asian fish stock for soups.

      I would seriously suggest trying eggs...they have been my savoir for flares, I just cook them soft with almond milk in them in a microwave so they are moist...and soft.

      I treat myself about once a month with either canned tuna, salmon, or millers crab meat (the real stuff), I found the crab easiest to digest and a super strong flavor in soups or with eggs.

      But again step back and say "I will try this for the first week" "Try this the second week" etc. Step by step on how you will try stuff, I know you want to jump to it and try to see what all you can eat but you have to space it and take it every few days for your testing of yourself to be accurate.

      Simple foods, the fewer ingredients the better, give yourself a low single digit number and stick to it so you do not get overwhelmed.
    • I think turkey would be great!  I am sort of thinking you might just want to do a sort of bland diet - as if you were getting over the stomach virus.  So a simple chicken soup with some cooked veggies like carrots and green beans or peas - you can then put it over rice or rice noodles if you want.  I like your idea of staying away from dairy, etc.  You can do that for a few weeks.   Grill the chicken on the grill or cook with a little olive oil in a pan - you can get a nice brown on the outside that adds a lot of flavor.  then put  little water in the pan and boil it and scrape the bottom and dump that in with the rice or veggies that are cooking.  You can throw that chicken in your soup/ rice.  If you cook fresh spinach in things - it can add a lot of spinach flavor.   I think cooked fruits or veggies are usually the easiest to digest.  But really keep it to a few things for a couple of weeks then add then when you are feeling a bit better.
